21 Day Fix Brownie Bites
1 scoop Shakeology
1 tsp melted coconut oil
enough water to mix
few drops coconut extract (optional)
Mix all ingredients. Roll into small balls or press flat and cut into small bite-sized brownies.
21 Day Fix Containers:
Healthier Cookie Dough Truffles
- 1 cup cashew butter (another nut butter will work too)
- 1/2 cup coconut flour
- 3 T maple syrup
- 1 tsp ground vanilla beans
- 1 1/2 cups chocolate chips
- 2 T almond milk
In a food processor, combine the cashew butter, vanilla beans, maple syrup and coconut flour. Mix well. Throw in about 1/4 cup mini chocolate chips and pulse a few times to mix them in. Place the food processor bowl in the fridge for 15 minutes.
Using a cookie scoop, drop cookies onto a parchment lined baking sheet. Once all the cookies are on the sheet, place it in the freezer while you make the chocolate.
Using a double boiler method, melt the chocolate chips and the almond milk. Once the chocolate is smooth, roll each cookie dough ball into the chocolate and place onto the parchment lined baking sheet. Using two forks works great for this.
Place the finished truffles back in the freezer to firm up. Once the chocolate is firm, you can store the truffles in the fridge or freezer.
