Chicken Alfredo - 21 Day Fix
This one of those 21 Day Fix recipes that the whole family will love! My husband didn’t suspect a thing and took the leftovers the next day for lunch. Just multiply the servings to make as much as you need for your family!
- 1/2 lb chicken breasts, boneless, skinless
- 1/4 c olive oil
- 1 1/2 c 2% cottage cheese
- 1/2 c Parmesan, shredded
- 3 tsp garlic powder, divided
- 1/2 tsp lemon zest
- 4 TBSP lowfat milk
- 1/4 tsp nutmeg
- 2 tsp oregano
- sea or Pink Himalayan salt to taste
- fresh black pepper to taste
- parsley to garnish
Add olive oil, 1-1/2 tsp garlic powder, 2 tsp oregano and chicken breasts to large ziploc bag. Remove all air and marinate overnight.
Preheat oven to 425 degrees. Bake chicken in oven for 20-30 minutes or until juices run clear. Meanwhile, add remaining ingredients, except parsley, to a blender. Blend smooth. Pour into a small saucepan over super super low heat. Heat, stirring constantly, until hot and cheese has melted. Pour over your favorite whole grain pasta or zoodles. Garnish with parsley, black pepper and sea salt, if desired.
