Crockpot Balsamic Roast

Sooo…it’s time to get back to my roots and some serious weight loss with 21 Day Fix and my clean eating crockpot group which starts tomorrow! I’m gonna be doing 30 minute workouts everyday, replacing one meal with Shakeology and eating clean with my Fix portion control containers to drop 10 pounds and get swimsuit ready!

Here we gooo! Day 1 of my 21 Day Fix Remix starts today! I’m also running a 7 Day Clean Crockpot Group so here’s the recipe for my dinner tonight!
day 1- 21dayfix
Ingredients:
2 lb top round roast
1 large sweet onion, sliced
8 ounces tomato sauce
1/2 cup balsamic vinegar
1/2 cup water
2 tbsp white wine
2 tbsp olive oil
For Rub: Salt, Smoked Paprika, Garlic Powder, Onion Powder and Black Pepper

Preparation:
Season your roast on both sides generously with the spices listed above to your liking. Heat your olive oil in a large pan over medium-high heat, once warm sear each side of your roast for 3-4 minutes. Place your sliced onions in the bottom of your crock pot and put your seared meat on top of the onions. Combine your balsamic vinegar and tomato sauce in a bowl and mix well, then pour over your meat in the crock pot. Add your water and white wine to your pan and de-glaze it and pour this mixture in your crock pot as well. Place the lid on, set to low and cook for 6-8 hours. Serve with steamed green beans and boiled new potatoes.

  1. I’m on day 2 of 21 Day Fix so I’ve been busy looking up recipes that my whole family will eat. How would you count containers for this meal? Would you just serve yourself one red container of meat, two yellows for the potatoes and a green for the beans?
