I tried this out for one of my clean eating challenge groups and it
made my house smell divine! Easy and delicious, save for a busy day.
I served it with steamed broccoli and a brown rice and quinoa mix.
3 pound pork loin
¼ cup low sodium soy sauce or aminos
1.5 tablespoons of yellow mustard
2 tablespoons of olive oil
3 tablespoons of maple syrup
1 teaspoon onion powder
1.5 teaspoons garlic powder
Turn crock pot on to low. Combine all the ingredients for the marinade. Place pork in crock pot and pour the marinade over the pork. Cook on low for about 6 – 8 hours. I flipped the pork over after 3 hours. Slice or shred and serve pouring the juices over the meat.
