Wash and trim strawberries. Cut each strawberry 1/3 from the small end/pointed tip. Then, mix ricotta, honey, and vanilla together in a small bowl. Place flat end of larger side of strawberry on platter. Using a spoon, top the wider part of strawberry with 1 tbsp of ricotta filling*. Place remaining part of the strawberry on the ricotta as Santa’s hat and push down slightly. Add two mini chocolate chips for the eyes and a dab of ricotta on top of the strawberry to decorate his hat. Repeat until all strawberries are assembled.
* If desired, use a pastry bag or sandwich bag with corner snipped to pipe the filling onto the strawberry.
