Two Clean Eating Pancake Recipes!


Protein Pancakes

1/3 cup nonfat vanilla Greek yogurt
1/4 cup low-fat cottage cheese
1/8 cup vanilla Shakeology or whey protein powder
1/8 cup whole wheat flour
1/4 cup old-fashioned oats
1 whole egg
1/4 cup unsweetened almond milk
Nonfat cooking spray
Once batter is blended, stir in:
1/4 cup raspberries (fresh or frozen, optional)
1/4 cup blueberries (fresh or frozen, optional)

Blend pancake ingredients in a blender. Once blended, stir in raspberries and blueberries.
Heat a pan over medium heat, then lightly coat with cooking spray.
Pour desired amount of batter into hot pan.
Flip when bubbles form in the batter, or when one side is golden.


Four Ingredient Pancakes

1 large banana
2 eggs
1/8 teaspoon baking powder
1/8 teaspoon ground cinnamon

Mash banana well and then mix in eggs, baking powder, and cinnamon. Pour 2 tablespoons of batter at a time and cook until bottom appears set (30-60 seconds) flip with spatula and cook additional minute or less. Serve warm with peanut butter or real maple and syrup.
