My family wanted pizza for dinner and so did I. My family got their pizza and I made these for myself. A few tips after trying these: keep the crusts thin and cook them crispy. After they are pan fried you can crisp them up in the oven before you add toppings. Put the cheese on top to keep other topping from drying out (or at least the chicken).

Mini Quinoa Pizzas
2 cups cooked quinoa
1 1/2 teaspoons kosher salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 cup tomato sauce
1/2 cup shredded mozzarella and or cheddar cheese
1/2 cup chicken breast, cooked and diced, if desired
2 strips turkey bacon, cooked and chopped, if desired
Vegetables, as desired
Heat a frying pan to medium heat. Combine the quinoa, eggs and spices. Add a bit of oil to the pan, then form patties and fry until golden brown on both sides. Note: At this point, the patties can be refrigerated for until you are ready to finish the pizzas.
To make the pizzas:
Heat the oven to 400 degrees. Line a baking sheet with parchment paper, and place the patties on the sheet. Spread a small amount of tomato sauce on each patty, then top with shredded cheese, and other desired toppings. Bake at 350 for 10-15 minutes, depending on how dark you like your pizzas. Remove from oven and serve hot.
